Baked 5-Cheese Tortellini


Tonight my mom and I were trying to fix dinner, but couldn't decide what to make because we didn't really have a "game plan" and were running low on groceries. Without having to make a trip to the store, we decided to experiment and see what we could come up with from ingredients we already had. Enjoy!

Baked 5-Cheese Tortellini
(1) Medium-sized Green Bell Pepper
(1) 14.5 oz. can of Chili-Ready Tomatoes
(1) Package of Olivieri® 5-Cheese Tortellini
1/2 cup Pepperoni
Newman's Own® Tomato & Basil Sauce
1/4 cup Shredded Mozzarella Cheese
1/4 cup Shredded Parmesan Cheese

For the Tortellini:
Preheat oven to 350°. Bring a pot of water to a boil. When the water is boiling, add in one(1) package of Olivieri® 5-Cheese Tortellini. When the tortellini begin to float to the surface, they are tender and ready to be taken out.

For the Sauce:
Dice one(1) medium Green Bell Pepper. Cut 1/4 cup of Pepperoni into quarters. Drain excess liquid in one can of Chili-Ready Tomatoes in a colander. Combine bell pepper, pepperoni, and tomatoes into bowl and add 1/2 jar of Newman's Own® Tomato & Basil sauce to the mixture. Set Aside.

Time to Incorporate Everything!
Spread a little bit of Newman's Own® Tomato & Basil sauce over the bottom of the baking pan. Next, spread the tortellini evenly into the pan. Spread the homemade sauce mixture (containing bell pepper, pepperoni, Newman's Own® Tomato & Basil Sauce, and the Chili-Ready Tomatoes) over the tortellini. Finish the dish by sprinkling the 1/4 cup of Mozzarella Cheese and 1/4 cup of Parmesan Cheese evenly over the top of the dish. Pop the dish into the oven and bake for 20 minutes, or until the cheese is slightly golden brown on the top. Let cool for a few minutes, scoop out, and enjoy!

**This makes an especially good dinner when paired with a side salad and slice of French bread**
